Sesame Noodles That Travel Well

Sesame Noodles That Travel Well

A packed lunch can lose its appeal when noodles clump into one cold block. The fix is to dress them while they are still slightly warm, then add crisp vegetables just before packing. Sesame, soy, and rice vinegar make a savory, tangy sauce that holds its character at room temperature.

Mix The Sesame Sauce

Whisk together two tablespoons of tahini, two tablespoons of soy sauce, one tablespoon of rice vinegar, one teaspoon of toasted sesame oil, and a teaspoon of honey or sugar. Add warm water a teaspoon at a time until the sauce is pourable, then stir in a little grated ginger if you like a sharper edge.

Dress Noodles While Warm

Cook eight ounces of noodles according to the package directions, then drain and rinse briefly with cool water. Toss them with most of the sauce while they are still a little warm, which helps the noodles take on the flavor instead of leaving it all at the bottom of the container.

Cut a cucumber into thin matchsticks and slice two scallions. Fold them through the noodles, saving a small handful of each for the top, then taste and add more sauce or rice vinegar as needed.

Pack For The Day

Scatter sesame seeds and the reserved scallions over the noodles just before serving for a little crunch and freshness. If you are taking lunch on the road, pack it in a chilled container and keep it cool until mealtime.

This is a flexible recipe, not a claim to one place’s definitive version. Its useful travel lesson is simpler: notice the combinations you enjoy while away, then build a lunch around their contrast of savory sauce, bright acidity, and crisp produce.
