- 1tbsp dry yeast
- 150ml warm water

5. Crackle Burgers – ingredients
Chilli
- Olive Oil 1tbsp
- One Chopped Onion
- 1 red bell pepper
- 2 carrots, peeled and finely chopped
- 3 cloves garlic
- 1 jalapeño
- Pinto beans 15 oz (canned or freshly boiled)
- Black beans 15 oz (canned or freshly boiled)
- Kidney beans 15 oz (canned or freshly boiled)
- Vegetable Broth
- Chilli Powder 2tbsp
- Salt and Pepper to taste
- Oregano
6. Freekeh carrot Ham
- One Chopped Onion
- 2 carrots, peeled and grated
- 1 garlic clove, peeled and grated
- ½ cup parsley, finely chopped
- 1 tbsp oregano
- 1 egg, whisked
- 100g breadcrumbs
- 180g roasted cracked wholegrain Freekeh
- 2tbsp olive oil
- Salt and pepper to taste
Recipe
Heat 1tbsp oil in a pan. Add onion, carrots, and bell pepper. Sauté until onions are caramelized, then add jalapeno and garlic and stir for five minutes. Add tomatoes, beans and broth, and seasonings. Bring to a boil then cook on medium heat until a saucy thickness is achieved.
You can add sour cream to make it creamier or a tbsp. of crushed Freekeh and stir for 1 minute.
Cook the Freekeh according to packet instructions, it’ll take about 30 minutes. Heat oil in a pan and sauté onions, carrots, and garlic until slightly brown. Pour them out in a bowl and mix with the cooked Freekeh, oregano, parsley, eggs, breadcrumbs, salt, and pepper. Refrigerate for half an hour so the ingredients can integrate well.
Shape the mixture into patties and lightly coat it with whole-grain flour or breadcrumbs. Shallow fry on both sides and serve with a generous helping of salad.

Ingredients of Crackle Burgers
1. Cheeseburgers
- 12 thin slices of pancetta
- 2 pounds ground beef
- Salt and pepper to taste

- Lettuce and tomato Slices
- Burger buns
2. Jalapeno Rarebit
- Butter 25g
- Plain Flour 25g
- Mexican Lager 150ml
- Mustard 1tbsp
- Cheddar Cheese
- Pickled Jalapeno 2tbsp, chopped
Recipe
1. To make the rarebit mixture, melt the butter in a pan and stir in the flour. Cook over low heat for 4-5 minutes until the mixture is light-straw colored. Gradually add the lager until you have a smooth sauce. Stir in the mustard then add the cheddar and stir until melted. Stir in the jalapeños. Pour into a clingfilm- or baking paper-lined 18cm x 18cm tin, spread out evenly, and put in the fridge. When completely set and cold, cut into 4 squares.
- For the cheeseburgers, preheat the oven to 220 degrees C, and prepare a grill for medium-high heat. Bake the pancetta until golden brown and crisp, about 10 minutes. Transfer to a paper-towel-lined plate to drain.
2. Season the beef with salt and pepper. Add salt and pepper and mix well. Shape into burger size patties and grill on both sides until golden brown.
3. Layer up your burger with lettuce slices, beef patty, jalapeño slices, and pancetta. Serve with a helping of tomato sauce and cheese.
